Xanthan Gum

Produced via fermentation, Xanthan Gum is used to thicken, stabilize emulsions, and to texturize. Soluble in cold and hot water forming a viscous liquid, but not a gel. Stable in a wide range of pH. Works synergistically with locust bean gum and konjac to form a thermo-reversible gel.
