Glycerol esters of fatty acids (mono and diglycerides) with HLB's (Hydrophilic/Lipophilic Balance) ranging from 2 and 6. Some are available in self-emulsified forms for easy dispersion. They include water-in-oil emulsifiers used in baking goods, chewing gum, emulsified shortenings, fillings, confections and flavor solubilizers. The Aldo; product line also includes propylene glycol monoesters (up to 70%).
